Ingredients

1/4 whole duck duck meat
30g lemongrass minced
50ml fish sauce
caramel sauce Nước màu
20g seasoning powder
60g sugar
5g pepper
2 pcs garlic
1 pc shallot
1 pc chili
1 tbsp cooking oil
2 tbsp white wine
4 slices ginger

Preparation

Chop the 1/4 duck into appropriately sized, 3-5 cm long pieces. Soak in white wine and ginger to get rid of the smell. After that, wash clean and let dry.

Marinate with 50ml fish sauce, 20ml caramel sauce, 20g seasoning powder, 60g sugar, 5g pepper and 1/2 of the minced lemongrass.

Flatten and mince the garlic and shallot. Add cooking oil into a pot and turn on the stove at medium heat. When the oil is sizzling, add minced garlic and lemongrass in to stir fry. Next, add duck meat in and stir fry roughly.

When the duck meat becomes firm, pour drinking water enough to cover the surface of the duck, continue to cook for 40 minutes then turn off the heat.
