Today we will share with you an authentic Saigon-style Vietnamese Pork Chop Recipe (Sườn Nướng Cơm Tấm). If you have ever been to Vietnam, passing by an old-school street-side charcoal grill filled with irresistible aroma is not an uncommon occurrence. That’s the famous Vietnamese BBQ Pork Chop well loved by food enthusiasts – locals and tourists alike.

This dish is made of freshly grilled pork cutlets imbued with hands-me-down Vietnamese marination technique. Note the specified amount of ingredients very carefully since the marination is what will make or break the final result.

Vietnamese Pork Chop can be enjoyed with accompanying broken rice (cơm tấm), shredded pork mixed with shredded pork skin (pork bì) and egg meatloaf (chả trứng). Without saying, a nicely mixed sweet and spicy fish sauce is a must for this delicacy. With that said, let’s prepare the charcoal grill and start making Saigon-style Sườn Nướng Cơm Tấm!

Wash the pork cutlets and let dry.

Mix the following ingredients: minced garlic, shallots, 3g salt, 100g sugar, 100ml fish sauce, 2 tbsp honey, 2 tbsp condensed milk, 3g seasoning powder and 2 tbsp soda (Use Coke instead if soda is not available). Add 1 tbsp of rose cooking wine (This is a must-have to recreate the aroma of Vietnamese bbq pork chop). Mix well and blend the mixture in a juice blender until soft and smooth.

Wear a pair of plastic gloves and place the dried pork cutlets into a large bowl. Pour the blended mixture in and start massaging the cutlets for about 15 minutes so the ingredients are full absorbed. Add 2 tbsp chicken oil in and continue to massage the meat. Note: If there is no chicken oil available, use cooking oil instead but the taste will not be as savory.

Place some thin slices of lemons on the surface of the marinated cutlets, use a plastic wrap to cover the bowl and place inside a fridge to marinate overnight.

On the next day, take out the marinated cutlets and start grilling them on a plated brazier / charcoal grill.

First, grill the cutlets roughly then take them out. Dip into the marinated sauce before continuing to grill until golden brown and a strong flavorful aroma fills the air.

Vietnamese Broken Rice Pork Chop Sauce Recipe

How to make the accompanying fish sauce: Mix 4 tbsp fish sauce, 1 tbsp sugar, 2 tbsp hot water to let the sugar dissolves, stir well. Let cool then add minced garlic, minced chili and lemonade (You can adjust the proportions to suit your taste)
