2 pcs garlic
1 tsp salt
2 tbsp sugar
2 tbsp cooking oil

Directions

Many great Vietnamese dishes will not taste right without the aromatic spiciness from chili garlic sauce (Tương ớt tỏi). Good news is such sauce can be easily made at home with really simple and readily available ingredients. Used as either a dipping sauce for several dishes, or a condiment to go with many Vietnamese noodles and soup delicacies, chili garlic sauce is a popular and essential part of your Vietnamese dining table.

Peel the garlic and mince them. Wash the chili and cut off the stems.

Place the chili into a pot and pour water in enough to to cover them. Bring to a boil for about 15 minutes until the chili is cooked and soft.

After that, blend the chili in a blender until they are minced, soft and smooth.

Heat a frying pan with 2 tbsp cooking oil. Add minced garlic in and stir fry roughly. Add the minced chili into the pan with 2 tbsp sugar, 1 tbsp vinegar, and 1 tsp salt. Stir until the condiments fully dissolve. Simmer for about 2 minutes then turn off the heat.

Pour the finished chili sauce into a glass bowl or jar and store in a cool place for future use. Tuong ot toi is great as a dipping sauce for several Vietnamese dishes, or can even be mixed in noodle and vermicelli soup for that extra flavor. Enjoy!
