Directions

In the cold weather, it would be nice to have a family gathering around the dining table to enjoy some hot sweet and sour pork ribs. If you have a sweet tooth, consider pouring some of the pork sauce on your rice bowl, it would be indescribably tasty.

Boiling the ribs

Rinse the pork ribs, chop them into small pieces, then put them in a pot of cool water with a teaspoon of salt added. Bring to a boil for 2 to 3 minutes, then turn the heat off, transfer the ribs into a bowl then boil for a second time just like the first time for cleaner ribs.

Remember to keep this broth for later use.

Peel and smash shallot and garlic into small pieces.

Marinating the ribs

Marinate the ribs with soy sauce and half of the minced shallot and garlic for 20-30 minutes.

Place the ribs in a frying pan, pour water in to cover the ribs, simmer in medium heat until the water nearly dries out.

Stir-fry the remaining half of shallot and garlic in oil until they turn light brown. Take the shallot and garlic out of the oil, then use this oil to fry the simmered ribs until golden brown (note: don’t fry for too long to avoid drying the ribs as they are already cooked).

Making the sweet and sour sauce

Make the sweet and sour sauce by mixing 2 tablespoons of the broth, 3 tablespoons of apple juice, 4 tablespoons of vinegar, sugar and soy sauce to your taste.

Serving

Pour above mixture on the ribs, cook in medium heat until the sauce thickens, then serve.
