Ingredients

1-3 kg (2-6 lbs) beef bones knuckles and marrows
1 onion peeled
500g beef bones knuckles and marrows
fish sauce
salt
sugar
stock powder
For the Pho aroma
2 knobs ginger thumb size, sliced
1 onion unpeeled and halved
1 tsp coriander seeds optional
2 cinnamon sticks
3 star anise
2-3 black cardamom
For the bowl
spring onion
1kg (2.2lb) flat rice noodles Dried (Sợi phở)
300g (10.5 oz) beef eye of round/ sirloin
1 onion very thinly sliced and soaked in ice water
Garnishes
500g (1.1 lb) beansprouts blanched - optional
1 lime cut into wedges
1 Hoisin sauce Optional
1 Sriracha Optional
Asian basil
sawtooth herbs

5-10 minutes

Prepare the broth

Boil bones about 5-10 minutes to remove dirt

Take the bone out then rinse with cold water

In a large pot , add the bones and 5-6 liters of water, add 1tsp salt, 1 tsp sugar and onions and meat chunks

Cut the ginger into slices and halved onions

Bake ginger, anise, cinnamon, seminars, onion in a stove

Cooking the beef

Continue to stew 1-2 hours uncovered until the meat is tender

Wash and soak rice noodle in water in boiling water for 15 seconds to soften it, add to each bowl

In the bowl, add noodle then add the meat, onion, vegetables, pepper and finally pour the soup broth in.
