Ingredients

500g chicken bone
20g shallot
20g ginger
200g pork lean meat
1 1/2 tbsp seasoning powder
1 tbsp salt
300g fresh prawns
1 tsp fish sauce
10g shallot minced
2 tbsp cooking oil
1 tbsp cashew oil
20g onion
1kg Quảng noodle
10 pcs quail egg
1/2 tbsp turmeric extract
2 tbsp sugar
2 ltr water
spring onion

Directions

Mì Quảng (Quang Style Noodle Soup) is a traditional dish of people from the Quảng Nam province. Today we will show you how to cook Mì Quảng dish with pork and fresh prawns. Its combines a delightfully savory soup base, sweet taste from pork meat and prawns, a little chewy but soft Quảng noodle and eye-catching fresh herbs.

Marinating the pork and prawns

Add 300g prawns and 200g lean pork into a bowl, add 1 tbsp seasoning powder, 1 tbsp sugar, 1 tbsp fish sauce, and 1 tbsp cashew oil. Add 10g onion and 10g minced shallot. Use a spoon to mix well and marinate for 30 minutes.

Making the soup base

Add 500g chicken bones and 2 litre of water into a large pot, add 10g grilled ginger, 20g grilled shallot and 20g fresh ginger. Next, add ½ tbsp of salt. Close the lid and boil for 45 minutes. After that, scoop out the bones leaving the soup base.

Cooking the broth

Heat 2 tbsp cooking oil, add 10g onions and stir fried until they turned brown and aromatic. After that add marinated pork and prawns and stir fry, add 1 litre of soup base and close the lid. Cook under premium heat.

When the broth is boiling, season with ½ tbsp salt, 1 tbsp sugar, ½ seasoning powder, and ½ turmeric extract. Use a spoon to mix well, continue to cook until the broth boils again, add 10 quail eggs and continue to cook for 2 more minutes.

Serve

Dip the noodle in boiling water quickly and let dry. Place pork and quail eggs in the bowl, sprinkle spring onions, onions, and peanuts. Pour the broth into the bowl and serve with fresh vegetables and herbs and grilled girdle-cake (banh trang nuong) and enjoy when hot.

With this recipe, you no longer need to visit a streetside store to enjoy Mì Quảng but still can have a delicious bowl of home-made Quang Style Noodle Soup that’s both hygienic and economical.
