Ingredients

500g rice noodle Hủ tiếu
200g fresh prawns
500g pork bone
200g pig liver
6 pcs quail egg
100g celery
200g tung ho Rau tần ô (cải cúc)
50g leek
1 pc onion
1 pc carrot
4 pcs garlic
2 tbsp cooking oil
100g minced pork
200g pig's tripe
2 tsp seasoning powder
1/2 tsp salt
1 tsp fish sauce

Today we will share with you our recipe for making Hủ Tiếu Nam Vang (Phnom Penh Noodle Soup). This cuisine has long been popular with people in the south of Vietnam for its variety of fresh ingredients and sweet but delectable broth.

There are many ways to prepare Hủ Tiếu Nam Vang, but with this simple recipe, you can definitely create an authentic taste that will get the nods from even the most discerning food gourmets!

Preparation 1

Peel onions, chop into petal shaped pieces. Shave off carrot skins, cut into appropriately sized pieces. Peel and mince the garlics.

Preparation 2

Wash celery, leek and tung ho leaves, let dry. Chop celery and leeks into 1/3 length - pieces.

Cooking 1

Wash and clean the pig bones, roughly boil them to get rid of dirt. Add the into a pot with 1 litre of water and boil again.

Add onion and carrots into the broth pot, and continue to cook on high temperature.

Cooking 2

Clean and wash pig's tripes with salt water. Boil the pig's tripes, liver, prawns, and quail eggs.

Let pig's tripes and liver cool and cut into size-bite pieces. Peel off the prawn shells and heads. Peel the quail eggs.

Cooking 3

Heat a frying pan and stir fry minced garlic till they turn brown and aromatic. Scoop 1/2 of the fried garlic into a small bowl.

Add minced pork into the frying pan, stir fry them well. Add these into the broth pot. Add seasoning powder and fish sauce. Season again as needed to suit your taste.

Cooking 5 & Serve

Dip the rice noodle quickly into boiling water to soften them, then add into a bowl. Arrange the pig tripes, liver, prawns, eggs, diced celery and leeks on top.

Pour the broth on and sprinkle some fried garlic on top to complete your Phnom Penh rice noodle. Enjoy with the previously chopped tung ho leaves, celery and leeks in step 2.
