Ingredients

450g fresh prawns
450g pork belly
240g rice noodle Bún tươi
200g beansprouts
200g lettuce
100g leek
200g coriander
4 packs rice paper
100g salted soy bean Tương Hột
3 tsp chili minced
10g peanut flatten
2 tsp vinegar
1 tsp seasoning powder
6 tbsp Hoisin sauce sốt tương đen
1 tbsp peanut butter
100g Asian basil húng quế

One of the most popular Vietnamese dishes, Gỏi cuốn tôm thịt (Prawn & Pork Fresh Spring Rolls) is enjoyed daily by millions around the world. The healthy fresh rolls contain a balanced  nutrition content with fresh prawns, pork belly, various vegetable and herbs, all enjoyed fresh and without any processing.

Contrary to popular beliefs, this delicacy is surprisingly easy to prepare. The key, however, lies in the dish’s signature black sauce used for dipping the spring rolls. Today we will show you a recipe for authentic Southern style Gỏi cuốn tôm thịt. Let’s start!

Preparation 1

Wash prawns clean then steam or boil them thoroughly, peel off the shells. Wash pork belly, boil and cut into thin slices.

Wash lettuce, asian basil and leek, let dry. Wash cucumber and chop into long and thin pieces.

Preparing the rice paper for rolling

Wet your fingers and lightly stroke the rice paper surface to moist them. This will soften the rice papers, making them easy to roll and prevent breakage.

Afterwards, place some lettuce, rice noodle, pork, asian basils, mint leaves and cucumber on the rice paper, one by one. Carefully roll the paper half way.

After that, place the prawns and leek in, and continue to roll the whole piece like photos above. The fresh spring rolls are now done.

Making the sauce

In a small pan, mix 1 bowl of hoisin sauce with 1/4 bowl of broth (from boiling the pork), prawn, 1/2 tsp sugar, 1 tbs peanut butter, garlic and salted soy beans.

Boil the mixture on medium heat until the sugar dissolves completely (approx. 1-2mins). Turn off the heat. Pour the sauce into a bowl and sprinkle some peanuts on top.

Serve

Dip the spring rolls into the sauce before eating. If you prefer spicy food, just add some minced chili and enjoy. Thanks for reading!
