Ingredients

500g frog meat
1/2 pc onion
4 stems spring onion
3 pcs garlic
4 tbsp fish sauce
2 tbsp sugar
1 tsp seasoning powder
1 pc lemon
5 tbsp cooking oil
2 tbsp salt

Directions

At the start of the rainy season, the fields and canals are overflowed with water. It is also time for people at the countryside of Vietnam to get together for frog catching. Frog has long been known for its versatility as a nutritious ingredient for many Vietnamese dishes, which can be cooked deliciously without much hassle.

Preparation 1

Clean the frog parts, chop into 4-6 cm long pieces. Marinate the meat with 2 tbsp salt and squeeze 1 lemon in, mix well, use your hand to gently massage the meat to get rid of the slipperiness.

Note: You can either keep or remove the frog's skin depending on your taste.

Preparation 2

Mince the garlic. Wash the spring onions, cut into 4-cm long pieces. Slice onions into finger-sized pieces. Wash lettuce, cucumber and tomatoes to be used as accompaniment later.

Add plenty of oil into a frying pan on high heat. Add the frog meat into the pan and start stir frying. Scoop them out when golden brown.

Stir fry garlic in a different pan. When they turned golden brown, add sugar, seasoning powder, fish sauce, sliced onions and frog meat in to stir fry together.

Stir well on medium heat until the seasoning fully absorbs into the frog meat. At this point, add spring onions and continue to stir fry until the minced onion is cooked. Scoop frog meat onto a plate and serve with rice. It is best to dip the frog meat into pepper mixed with lemon and salt (muối tiêu chanh), and enjoy with accompanying raw vegetables such as lettuce, cucumber and tomatoes.
