Ingredients

2 pcs tofu
250g straw mushroom
25g wood ear mushroom
50g peanut
1 pc leek
3 pcs lemongrass
1 tsp ginger powder
1 tsp salt
3 tbsp soy sauce
2 tbsp sugar
1 tsp white sesame
1 tsp chili powder
1/2 tsp pepper
100ml cooking oil

Preparation 1

Wash and use paper to dry tofu. Chop into cubic shaped, 2-cm long pieces.

Preparation 2

Shave off the straw mushrooms' root, mix in diluted salt water for 5-10 minutes. Dip wood ear mushrooms in a bowl of water, then cut into medium-sized pieces. Mince the leek's white part. Cut lemongrass into finger-sized pieces and mash them with masher or cooking mallet.

Add cooking oil into a frying pan and wait for it to heat. Then add tofu in and stir fry until they turn light brown and crispy. Scoop out the tofu and let the oil absorbs on paper.

Cooking 2

Add 1 tbsp oil into a hot frying pan and stir fry the minced leek for the aroma. After that, add 1 tbsp soy sauce, mix well then add the straw mushroom and wood ear mushroom in and fry together for a few minutes.

Season with 1 tsp salt, 2 tbsp sugar and 2 tbsp soy sauce.

Add the tofu and the rest of the ingredients into a pot, stir well, pour water enough to cover the top layer. Close the lid and simmer until the water thickens and become a little sticky.

Serve

Add the white sesame and turn off the heat. Serve with rice. Enjoy your freshly stewed Hue styled bean curds!
