1 pc sweet potato
100g fresh prawns
500g minced pork
1 pack rice paper
3 pc spring onion
salt
1/3 tsp pepper
1 tbsp tomato ketchup
1 pc egg
1 tsp seasoning powder
1 tbsp chili sauce
300ml cooking oil

Preparations

Wash and mince the fresh prawns and spring onions. Wash, peel and chop the sweet potato into small pieces.

Preparing the fillings

Boil the chopped sweet potato inside a pot, take out and mash until soft and smooth.

Add the minced pork, prawns, sweet potatos, spring onions and egg yolk into a bowl, add seasoning powder and pepper. Mix and stir until it forms a sticky mixture. We will use this for the spring rolls fillings.

Making the rolls

Place the rice papers into a plate, and start putting the fillings onto each piece of rice papers like image above.

First roll a little from one side, then fold the 2 sides perpendicular to the fillings; continue to roll all the way to the other end.

Deep frying

Pour cooking oil into a pot until half full, heat and start deep frying.

Note: you must use plenty of oil, more than enough to cover the whole rolls so that the rolls do not touch the bottom of the pot

Serve

Scoop the fried rolls out and let dry. Serve with chili sauce and ketchup.
