1 can beer
30g dill
2 pcs shallot
2 pcs garlic
10g ginger

Preparation

Clean spring onion and dill leaves, chop into 10-cm long pieces. Peel and flatten garlic and shallot. Wash and slice ginger into thin pieces. Peel tomato skins to make decorative roses for later. Chop tomatoes into slices like image above.

Stuffing the red tilapia

Clean the red tilapia thoroughly with water and salt to remove any fishy smell. Let dry. Marinate with 1/3 tsp salt, 1 tsp seasoning powder, 3/4 of the shallots, dill leaves, garlic, ginger and 1 tbsp cooking oil. Paste the mixture so the entire tilapia is well marinated. After that, add all of these ingredients inside the fish to retain the aroma when steaming.

Stand the marinated red tilapia on a plate by stretching the belly part that was stuffed with marinating ingredients. Like this the fish meat will be cooked very quickly and evenly. If not possible, you can also just lay the fish flat on a plate to steam.

Pour beer into a pot, place the whole fish plate in and close the lid. Boil for 15-20 minutes and the red tilapia will be fully cooked.

Arrange the steamed red tilapia onto a plate,. Lay out the tomatoes and roses onto the plate for decoration. Enjoy with sweet and sour fish sauce. For side dishes, rice, rice paper or simply raw vegetables will be equally good.
