2kg beef shank
250g beef
450g carrot
1 pc onion
2 pcs tomato
1 tsp garlic minced
1/2 tsp lemongrass minced
1 tbsp cooking oil
1 tsp salt
1 tsp sugar
1 tsp seasoning powder
1 tbsp fish sauce
1 tbsp beef stew seasoning powder
10g coriander
10g basil
4 pcs baguette

Bò kho (Vietnamese Stew Beef) is without a doubt a staple food of the Vietnamese that’s also enjoyed by food lovers around the world. It is a versatile dish that can be enjoyed with a variety of signature Asian side dishes, such as the famous Bánh mì (Vietnamese Baguette), Phở (Vietnamese Beef Noodle) or white rice.

The stew’s unique flavor that combines many different types of traditional aromatic herbs, the soft beef shanks and tendons that melt in your mouth will surely leave you craving for more. It is great to enjoy on a cold day to warm yourself up.

Preparation 1

Wash and clean beef shanks, use a sharp knife to shave off extra meat at the sides. Cut the beef shanks into slices of size 3 x 3 x 5 cm.

Preparation 2

Peel carrot, cut into thin pieces, dice onion, wash and mince the tomatoes. Wash and dice coriander leaves and basil.

Cooking 1

Wash the beef tendons and boil on high heat until soft. After that, scoop out the tendons and chop into small pieces like photo above.

Cooking 2

Stir fry onion, minced garlic and lemongrass in a frying pan with 1 tbsp cooking oil until the onion is soften and aromatic. Add beef shanks and beef tendons in, continue to stir fry for 7-10 mins until the meat changes to a brownish color. Pour the mixture into a pot.

Cooking 3

Add 1 tsp sugar, 1 tsp salt and minced tomatoes into a pot, pour water enough to cover the meat. Lower the heat and simmer for about 25-30 minutes so the meat has enough time to absorb all the ingredients.

Cooking 4

Add carrot and 4 times the current amount of water into the pot to dilute the seasonings, add 1 tbsp fish sauce, 1 tsp seasoning powder and beef stew seasoning powder. Continue to cook on medium heat until the meat is very soft. Season again to make sure the taste is right.
